Rudy’s started in Manchester and has several branches, including three in Liverpool. The Castle Street branch is in a smart shopping street that boasts seventeen listed buildings and was one of the seven original streets that made up the original borough of “Livpul” founded by King John in 1207.
The pizzeria offers pizza, as the restaurant name suggests, in the Neapolitan style. It has a proper oven that reaches 485C, cooking the pizzas in just one minute. This temperature would meet the demanding standards of the Associazione Verace Pizza Napoletana, which sets out a list of standards for Neapolitan pizza.
I had a Calabrese pizza and this had a pleasingly soft crust with leopard spotting (you get this when the dough has a long ferment period and the gluten relaxes, along with a hot oven and rotating the pizza), and arrived piping hot. The toppings were fine and this was a very good pizza indeed. I was just here for a casual lunch so did not try anything else but I would happily come back here based on this pizza. Service was fine and the bill was £14.70 for one with sparkling water to drink, before tip.
