Roys, a 20 minute cab ride from Honolulu, is by far the best restaurant in Hawaii (based on two visits, one in 1992 and another in 1997). Roy Yamaguchi is a French-trained Japanese-American chef, and delivers genuine Hawaiian fusion cooking. Seafood dishes are, naturally enough, the highlight. He has now opened several other sites, such as in San Diego, but the standard here remains high based on my visits.

Roy's has REALLY expanded to the Mainland these days. Fusion food is the name of the game and Yamaguchi does it superbly. I hope with the expansion the level has not gone down. Last time in Hawaii was 2002 so things may have changed.
